Fleming’s Prime Pours & Pairings presents a 5-course dinner celebrating the refined coastal expressions of Flowers Winery and the bold, structured beauty of Faust Cabernet Sauvignon. 
 

Each course will be thoughtfully composed to highlight the character & nuances of each wine. 

AMUSE-BOUCHE: GOAT CHEESE TART

FIRST COURSE: WHITE FRENCH SALAD 
spring mix, caesar croutons, shaved vino rosso cheese, pickled cucumbers, campari tomato

SECOND COURSE: LOBSTER RAVIOLI 
tarragon & champagne brie filling, fennel velouté split sauce 
Paired with FLOWERS, Chardonnay, Sonoma Coast 

THIRD COURSE: JUNIPER RUBBED LAMB CHOPS WITH RATATOUILLE 
oven-roasted Lumina lamb chops rubbed with fennel salt, balsamic reduction 
Paired with FLOWERS, Pinot Noir, Sonoma Coast 

FOURTH COURSE: GRILLED BEEF TENDERLOIN 
6oz tenderloin, spring onion gratin, espresso butter demi-glace 
Paired with FAUST, Cabernet Sauvignon, Napa Valley 

FIFTH COURSE LEMON: SEMIFREDDO QUENELLE 
lemon crumb, honey-lemon caramel 
Paired with coffee or tea
